
Our kids are in love with these fudgesicles, and so are we! This recipe also makes a lovely healthy mousse/pudding (it looks great in a wine glass with raspberries and a sprig of mint on top), or can be frozen in popsicle molds to make fudgesicles.
Prep time: 10 minutes
Yield: 4 fudgsicles
Ingredients:
- 3 avocadoes (to tell if it’s ripe, flick the dry stem off the avocado – if it’s green-yellow it’s ready to eat, if it’s brown it’s over-ripe – don’t buy it!)
- 1/3 cup maple syrup (can increase to 1/2 for a sweeter version)
- 2/3 cup cocoa (we like the Cocoa Camino brand)
- 1 Tbsp vanilla extract
- 1.5 Tbsp olive oil
Directions:
- blend all ingredients together with hand blender or food processor
- spoon into popsicle holds (we like the Onyx stainless steel option)
- freeze overnight
- warm mold with warm water to release the fudgesicle
- enjoy!
(alternatively enjoy as a mousse/pudding, chilled in fridge or eaten fresh)
